Pilates Wellness Wednesday: Apple Chili for the Autumn Harvest

This time of year, many of us are surrounded by apples from our gardens. While pies and crumbles are the usual go-to, apples can also be used in savoury dishes. A good example is apple chili. It is warming, filling, and a smart way to use up the extra fruit.
Chili usually means beans, tomatoes, and spices. Adding apples changes the balance, bringing natural sweetness that offsets the heat. It also creates a thicker, richer sauce. This makes the dish both comforting and practical.
Vegan Apple Chili Recipe
Ingredients:
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
2 red apples, cubed
1 red pepper, chopped
2 carrots, diced
2 sticks celery, diced
2 cans chopped tomatoes (400g each)
2 cans beans of choice, drained and rinsed
1 cup cooked lentils
1 tbsp tomato paste
2 fresh chillies or 1 tsp chilli flakes
1 tsp smoked paprika
1 tsp cumin
1 tsp cinnamon
½ tsp cayenne pepper (optional)
Salt and pepper to taste
Method:
Heat oil in a large pan. Cook onion until soft, then add garlic.
Add carrots and celery, cook for 5 minutes.
Stir in paprika, cumin, cinnamon, and chilli.
Add apples, red pepper, and tomato paste. Stir well.
Add tomatoes, beans, and lentils. Bring to a simmer.
Cook gently for 35–40 minutes, stirring occasionally. Add water if needed.
Season and serve.

Pilates is about balance, and food plays a part in that. This recipe makes use of seasonal produce and turns it into something nourishing.
