Pilates Wellness Wednesday: Freezing and Grating Lemons, A Simple Way to Use the Whole Fruit

There has been a growing trend around freezing lemons and grating them whole, including the skin and pith. While it is often promoted as a nutritional shortcut, the real value lies in something much simpler. It encourages using the entire fruit rather than just the juice.
In Pilates, we often talk about working the body as a whole rather than focusing on isolated parts. The same principle applies here. Instead of using just one element of the fruit, freezing and grating allows you to include everything, creating a more complete approach.
Freezing the lemon changes its texture, making it firm and much easier to grate. This allows the peel, pith and flesh to be used together in one simple action. Instead of discarding parts of the fruit, everything is included.
The peel contains plant compounds such as flavonoids and essential oils, which have been studied for their antioxidant properties and potential role in supporting overall health. The pith, often avoided because of its bitter taste, provides fibre and additional plant compounds that are normally left behind.
By grating the whole lemon, you are increasing the variety of nutrients and compounds in your food, not by adding more, but by wasting less.
Freezing also offers a practical advantage. Lemons can be stored for longer without spoiling, reducing food waste and making it easier to have them available when needed. A frozen lemon can be taken straight from the freezer and grated into meals, drinks or recipes without preparation.
From a practical point of view, grated lemon can be added to water, yoghurt, salads or savoury dishes. It brings both flavour and a broader range of plant compounds into everyday meals with very little effort.
There is one important point to consider. The peel of non-organic lemons may contain pesticide residues and wax coatings. If you plan to use the whole fruit, it is advisable to choose organic lemons or wash and scrub them thoroughly before freezing.
